I had the pleasure of speaking with Ruth Holton-Hodson, a board member of Solar Cookers International. Our conversation reveals how this innovative organization is addressing hunger, improving health, and protecting the environment in vulnerable communities worldwide. Ruth shared some powerful insights that really stuck with me. On the impact of traditional cooking methods, she noted: "One family of four uses one ton of wood a year to fuel their fire. So where's that wood coming from? It's coming from the forests and the woods near the villages, which slowly get cut down, which creates tremendous deforestation." I was fascinated to learn about their strategic approach: "We've moved in a policy direction where we actually serve as the hub, if you like, of this worldwide solar cooking movement. And so we divide our work into three pieces: advocacy, research, and capacity building." Ruth also offered a beautiful reflection on the importance of service in retirement: "I think for me, service is an essential component about what I need to do. It's not just about filling the time... you get so much more back." I found our conversation both enlightening and inspiring.
